This recipe is so tasty no one will miss the carbs. We used a cast iron skillet but it’s optional.
However, I love cooking with cast iron and how delicious the food turns out.
Ingredients for Keto chicken recipe:
- 1 pound of boneless skinless chicken breasts (thawed)
- 1/2 teaspoon of salt
- 1 cup of water
- 4 oz of pepperonis
- 1 can 8 oz of tomato sauce
- ½ onion
- 1 can of diced tomatoes, 15 oz
- 1 teaspoon of garlic salt (or can use garlic powder)
- 2 cups of Mozzarella cheese
- 1 Tablespoon of Italian Seasoning
- 1 teaspoon of pepper
How to make Pizza Chicken Keto recipe:
- Thinly slice or chunk the chicken.
- Pour about a tablespoon of olive oil in a skillet.
- Brown the chicken evenly. Season with salt and pepper.
- **The key is to get the chicken browned before you stir it. It adds extra flavor to the sauce without adding fat.
- Chop onions and add to the chicken. (I use a small food chopper or processor to quickly and easily do this)
- Once the onions are translucent cut the pepperonis in half and stir in.
- Pour in diced tomatoes (not drained), tomato sauce, and water. Then add garlic salt, salt and pepper, and the Italian Seasoning.
- Bring to a boil and cover. Reduce heat and let simmer about 10 minutes until sauce thickens.
- Top with the cheese and enjoy!
Tips for making Easy Pizza Chicken:
I use a small food chopper or processor to quickly and easily chop the onion. You can also add green pepper if you prefer.
If you do not have one of these, I highly recommend them. They are such a time saver.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take diced onion or bell peppers out of the freezer for recipes.
