It is easy enough to put together even during busy mornings. You will love coming home to dinner ready to enjoy.

  • boneless skinless chicken breasts
  • chicken broth
  • onion

Just put everything but the cream cheese and whipping cream in the crock pot. It is that simple.

If you plan to add extras like the green chilies, go ahead and add that too now.

Cover and cook. The slow cooker will do all the work to cook the chicken.

When the chicken has finished cooking, shred the chicken and place back in the crock pot.

Our favorite way to shred chicken is with an electric mixer. It is much faster than using 2 forks. Give it a try.

30 minutes before ready to eat, add the heavy cream and the cream cheese. Stir until melted and everything is combined well.

  • 3 boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1/2 onion diced
  • 1/2 cup salsa verde
  • 1 teaspoon minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 oz cream cheese
  • 1/2 cup heaving whipping cream

  • Place everything but the cream cheese and whipping cream in the crock pot.
  • Cook on low for 8 hours
  • Shred the chicken.
  • Stir in the heavy cream and the cream cheese until melted
  • Top with Monterrey jack cheese, diced tomatoes, and avocados

    Place all the ingredients except for the toppings, heavy cream and cream cheese in the instant pot. Seal and cook on high pressure for 20 minutes with a quick release. Shred the chicken. Mix the chicken, cream cheese and heavy cream back into the instant pot. Switch the sauté setting and cook for 3-5 minutes until the cheese is melted and combined. Serve with your toppings and enjoy!

    I have made this chili SO many times, I just love it more and more! As soon as I sense the beginning hints of fall, this is the first thing I am so eager to make! I add a small can of hatch green chilies to mine and it is delicioso! Every friend, family member, coworker and etc that’s tried it has begged me for the recipe!
