Ingredients for Keto Chicken Fajita Soup in the Instant Pot:
- 2 lbs boneless skinless chicken breasts (mine were frozen chicken breast)
- 2 cans of diced tomatoes, 10 oz
- 2 cups of chicken broth
- 2 tablespoons of taco seasoning (I used homemade taco seasoning)
- 2 teaspoons of minced garlic
- 1/2 cup of onion, chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
How to make Instant Pot Skinny Chicken Fajita Soup recipe:
Combine all the ingredients in the Instant Pot.
Lock the lid on top and set the valve to sealing.
- Set the timer for 30 minutes.
- Do a quick release.
Remove the chicken and shred.
After shredding the chicken, return the chicken to the pot. Stir to combine the flavors.
Serve with tortillas or tortilla chips and shredded cheese.
If you like a little extra heat, add a few dashes of red pepper flakes to this pressure cooker soup.

This looks wonderful, and is one of my favorite soups, but the nutrition facts say this soup has 46 carbs. It is marked low carb and to me that is definitely not low carb. Could you please tell me what a serving size is? Thank you, Carrie.

SO GOOD! This is a great pantry meal. I added a can of drained black beans and I only had 1 can of diced tomatoes so I added a can of tomato juice in it’s place. We also were out of fresh or frozen chicken but had canned (larger ones from Costco) chicken and used two of those. As the chicken was already cooked, I did HP for 10 minutes.
On a side note, it would be great if you could add a jump to recipe link at the top of your page…
