I love traditional egg rolls but they really aren’t that good for you with all of the frying and such. This instant pot southwest egg roll in a bowl is a delicious solution!
Plus, the pressure cooker gets dinner on the table in literally minutes! I don’t think anyone can even get take out as fast as this recipes comes together!
I thought at first the kids might miss the actual egg roll wrapper but no one said a word. This meal is so flavor packed that no one seemed to even notice. Talk about a mom win. 🙂
Ingredient for easy southwest egg roll in a bowl:
- 2 lbs ground turkey
- One onion, diced
- One Cup frozen corn
- One can black beans, drained and rinsed
- 1 TBSP Chili powder
- 2 tsp cumin
- 2 tsp minced garlic
- 1 (16 oz) pkg tri-color coleslaw
- 1 cup chicken broth
- Optional topping avocado and taco sauce
How to make instant pot southwest egg roll in a bowl:
Add ground turkey meat and seasonings to the Instant pot. Saute until turkey is cooked.
Add in beans and corn and broth.
Cover and set the pressure for 3 minutes.
Do a quick release.
Stir in the coleslaw mix.
Add the lid and cover and set the pressure for 2 minutes.
Do a quick release to release the pressure. Stir to combine the flavors
Serve in bowls.
Top with avocados and hot sauce. Our family loves to use extra hot sauce to kick up the heat but this is optional. I love how you can really customize this recipe and make everyone happy at dinner!
Sesame seeds and green onion also taste amazing as toppings. Yum!

One of our favorite time saving tips is to use a small food chopper or food processor to quickly and easily chop onions.
If you do not have one of these, I highly recommend them. They are such a time saver and you make cooking so fast and easy.
I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

I’ve had the regular Asian style egg roll in a bowl and loved it so figured I’d try this and OMG lemme tell you, it was worth a try!!
