Instant pot Italian beef sandwiches

This is our go to recipe when we have Game day or need to feed a crowd at dinner. The instant pot does all of the work and makes the beef really tender. Everyone will think the meal was slow cooked all day. It is that tender!

You can easily shred the beef with a fork to make the sandwiches. The peppercinis add so much flavor to the beef and I love to add even more to my sandwich.

Each sandwich gets loaded with provolone cheese for such an amazing dinner. It is so tasty.

If you have children with smaller appetites or need smaller portions for parties or Game day, just use sliders instead of sub rolls. This recipe is so easy to make work for any occasion.

Next, seal the instant pot by placing the valve on the top to the seal position.

Cook on high pressure for 70 minutes with a 15 minute natural and then release the remaining pressure on the instant pot.

Shred the beef and mix it into the juices in the instant pot. Slice the hoagie rolls and place them face up on a baking sheet.

Broil the rolls on high for 3-4 until the bread is browned slight.  Place the meat mixture on the bottom of the rolls, then layer on the sliced cheese, then broil for 1-2 minutes until the cheese is melted.  Place the top of the roll on top.

Serve and enjoy!

Time saving tip:

I use a small food chopper or processor to quickly and easily chop onions and green peppers. If you do not have one of these, I highly recommend them.

They are such a time saver.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take diced onion or bell peppers out of the freezer for recipes.

I made the roast and sandwiches on Monday night and they were loved by all! I used a sirloin roast. The taste was amazing! Leftover meat and juice made excellent beef tips with gravy over rice! Love this instant pot recipe and will make it again! Oh yea, my husband normally does not like to eat roast beef!
