Dinner time can be crazy around here. This simple recipe is perfect for a Saturday Night Dinner Idea when you need dinner on the table fast without a lot of fuss.

I set out a ton of different taco toppings and everyone can grab what they like for their casserole. It is a fun dinner idea and even good for guests. This casserole is also great to meal prep with for a week worth of lunches.

Ingredients

Taco Casserole Ingredients - ground beef, rotel, taco seasoning, butter, cauliflower rice, garlic salt, cream cheese, cheese
  • Ground Beef – Substitute ground beef with ground turkey or ground chicken. I have even used a combination of beef and turkey.
  • Rotel – If you want spicier taste, use the hot Rotel.
  • Taco Seasoning – We use Homemade Taco Seasoning Mix
  • Frozen Cauliflower Rice – Feel free to use fresh cauliflower
  • Cheddar Cheese – Substitute the cheese for Mexican Cheese blend, Colby Jack or Monterey Jack Cheese

Variations Ideas

  • Vegetables – If you want to sneak in veggies, add in bell pepper and onion.
  • Salsa – Substitute the Rotel for a salsa of your choice or make Homemade Salsa Recipe.
  • Spices – For added flavor and a hint spice add in a teaspoon of red pepper flakes into the beef mixture.
  • Jalapeños – Slice some fresh jalapenos before baking for delicious flavor.

How to Make Easy Keto Taco Casserole

Step 1 – Preheat oven to 350 degrees and spray a 9×13 casserole dish with no stick spray.

Step 2 – Meanwhile, in a large skillet, sauté the cauliflower in 2 tablespoons of butter over medium heat. (Or olive oil.) Season with garlic salt. Cook the cauliflower until it becomes soft.

Step 3 – Slowly mix in the cream cheese until melted and combined (Note- It will be thick.)

Step 4 – Spread your cream cheese cauliflower in the bottom of the casserole dish.

Step 5 – In your skillet brown your ground beef until there is no more pink. Make sure to drain excess grease.

Step 6 – Season with taco seasoning, and stir in the can of Rotel.

  • Step 7 – Spoon ground beef mixture over the cauliflower. Top with the shredded cheese.
  • Step 8 – Bake for 20 minutes-30 minutes until heated through and the cheese begins to brown. Serve topped with fresh cilantro and enjoy.

Expert Tips

  • Layering Ingredients – Instead of making a cauliflower layer and a meat layer you can mix it all in the skillet before adding it to the casserole dish.  We have cooked it both ways and it tastes great either way.
  • Cauliflower Mixture – If the cauliflower layer is a little too thick, try adding a little heavy cream to the mixture.
  • Make Ahead – This casserole is a great dish to make ahead and store in the fridge until ready to heat. If you have leftover taco meat, use it to make this taco casserole.

Serving Suggestions

The taco casserole can be served as is but we love to serve with a green salad or Air Fryer Broccoli for an easy side dish. We have even served with Best Mexican White Cheese Dip Recipe and keto tortilla chips for another easy side dish.

You can make your own cauliflower rice if you prefer that to frozen. Either will work perfectly in this recipe. We use frozen cauliflower rice a lot because it is quick but I also like to make my own Cauliflower Rice if I have time. It is very easy to do.
In a matter of minutes your fresh cauliflower is chopped up into a “rice”.

Can I Make Easy Keto Taco Casserole Recipe in the Crock Pot?

Yes, you can make this recipe in the crockpot. Yes, prepare the recipe as directed but layer it in the slow cooker and cook on low for about 3-4 hours.

    Recipe was absolutely delicious and I will be making it again. I would love to know what the serving size is rather then getting out eight bowls and measuring to try and figure it out. I used stewed tomatoes and some jalapeño slices (put both in my blender) because I had no rotel. Again, absolutely delicious!! Thank you!

    I have had this recipe printed for awhile now but I am finally getting around to making it. The only thing I’m confused about is the can of Rotel. I’m not sure if that’s a thing in the states but I’m not sure if we have that here. I thought maybe it was refried beans but looking at the can, and seeing carbs, I knew it wouldn’t be used in a low carb recipe. In the pictures it looks like tomatoes. SO just wondering what it actually is. Otherwise, can’t wait to try it. Thank you.

    At least 6 tbsp taco seasoning (I use homemade, too)
    Cheddar Jack instead of cheddar
    Top with cilantro and avocado/guacamole
    ???

    This was absolutely delicious
    My favorite taco meal is called a taco bake
    I was craving one but needed a keto Friendly solution. This was quick, easy, and exactly what I was craving! Tastes a lot like my mom’s taco bake!! But without the overload of carbs
    I added queso cheese to top off the meat before I put the cheese on top and the whole family including my picky kids LOVED IT

    This was sooo delicious and my Fiance loved it too! I used Daiya cheddar cheese and mozarella cheese and it worked well with the dish. I ended up mixing the taco meat in with the cauliflower/cream cheese mixture and it was great! I will definitely make again but will probably add jalapeno and green peppers.
