12ozfrozen cauliflower riceYou can make Cauliflower Rice if you prefer.
1teaspoongarlic salt
8ozcream cheese
2cupscheddar cheesegrated
Instructions
Preheat oven to 350 degrees and spray a 9x13 casserole dish with non stick spray.
In a large skillet, melt 2 tablespoons butter over medium heat.
Add 12 oz frozen cauliflower rice and 1 teaspoon garlic salt. Cook for 5-7 minutes until the cauliflower is softened.
Add 8 oz cream cheese and stir continuously until melted and fully combined with the cauliflower mixture.
Spread the cauliflower and cream cheese mixture evenly into the bottom of the prepared casserole dish.
In the same skillet, brown 1 pound ground beef over medium-high heat until no longer pink. Drain excess grease if needed.
Stir in 1 tablespoon taco seasoning and 1 can Rotel. Cook for 2-3 minutes until heated through.
Spoon the beef mixture evenly over the cauliflower layer in the casserole dish.
Top with 2 cups shredded cheddar cheese.
Bake for 20-30 minutes until heated through and the cheese is melted and lightly browned.
Remove from the oven, let rest for 5 minutes, then serve and enjoy.
Notes
Notes: Instead of making a cauliflower layer and a meat layer you can mix it all in the skillet before adding it to the casserole dish. We have cooked it both ways and it tastes great either way.If the cauliflower layer is a little too thick, try adding a little heavy cream to the mixture.
