  • Cheddar Cheese (shredded and divided) 
  • Baby Kale (chopped)

Variations Ideas

  • Pasta – Put a twist on this delicious recipe and add in angel hair pasta or spaghetti noodles. The addition taste amazing and it is a budget friendly addition. We recommend cooking the pasta before adding it into the slow cooker. Cook according to package instructions.
  • Veggies – We love the addition of the baby kale, but you can also use baby spinach for a delicious variation. Another option is to add in celery, carrots or other vegetables.
  • Chicken – We cooked our chicken in the slow cooker, but you can also make this recipe with shredded chicken or rotisserie chicken.
  • Seasoning – The ranch dressing mix is the best addition to this recipe. But you can also add in garlic powder or onion powder for amazing flavor.

Step by Step Instructions 

  • Step 1 – Place the chicken, ranch seasoning mix, pepper, chicken broth, 1 cup water and 4 slices of the chopped bacon in the crock pot.

  • Step 2 – Cover and cook on low for 5-7 hours or on high for 3 hours.  
  • Step 3 – Shred the chicken.  Stir it back into the crock pot. 
  • Step 4 – Stir in the cream cheese, 1 ½ cups of the shredded cheddar cheese and the chopped baby kale.

  • Step 5 – Cover and cook on low for 1 hour until the kale is wilted slightly and the cheese has melted. Add more water if needed based on the consistency of the soup.
  • Step 6 – Serve warmed topped with the reserved bacon and shredded cheese.  Enjoy!

  • Cooking Time – Cooking time will vary for this crack chicken soup recipe. We like to cook on low but cooking on high works great too.
  • Shred Chicken – Feel free to shred the chicken with a fork but we like to shred with a Stand Mixer. It shreds the chicken quick and easy to add back to the slow cooker.
  • Stove TopIf you prefer, you can make this soup on the stove top in a Dutch Oven. I like to cook the chicken before hand and then add to the soup mixture to ensure it is cooked thoroughly. Allow the soup to simmer for 20 minutes.
  • Cook the Bacon – Cook the bacon before adding it to the soup.

  • ½ teaspoon Black Pepper
  • 4 cups Chicken Broth
  • 1-2 cups Water
  • 6 Slices Bacon cooked and crumbed, divided
  • 8 ounces Cream Cheese diced
  • 2 cups Cheddar Cheese shredded and divided
  • 2 cups Baby Kale chopped
