These crock pot chipotle chicken tacos are quick and easy to make but taste delicious. Everyone enjoys this great adobo sauce slow cooker mexican recipe.
1tablespoonadobo saucefrom small can of chipotle peppers
1chipotle peppersfrom small can of chipotle peppers
1tablespoonancho chili powder
2tablespoonsolive oile
2teaspoonscumin
2teaspoonsdried oregano
1fresh limejuiced
3boneless skinless chicken breasts
¼cupcilantrochopped
1avocadooptional
12-20corn tortillas
Instructions
Combine ½ white onion, 1 tablespoon minced garlic, 1 tablespoon adobo sauce from the can of chipotle peppers, 1 chipotle pepper, 1 tablespoon ancho chili powder, 2 tablespoons olive oil, 2 teaspoons cumin, 2 teaspoons dried oregano, and the juice from 1 fresh lime in a food processor or blender. Blend until smooth.
Place 3 boneless skinless chicken breasts and the sauce into a slow cooker.
Cook on low for 6-8 hours or on high for 3-4 hours until the chicken shreds easily.
Shred the chicken and stir it back into the sauce in the slow cooker.
Serve on 12–20 warm corn tortillas and top with ¼ cup chopped cilantro and sliced avocado if desired.
