Ingredients
2lbspork tenderloin
1cuporange juice
2limes juiced
1cupcilantro chopped
⅓cupmint chopped
1tbspminced garlic
1tsporegano
1tspsalt
1tspblack pepper
2tspcumin
1tbspcorn starch
¼cupwater
Instructions
In a small bowl, whisk together 1 cup orange juice, juice from 2 limes, 1 cup chopped cilantro, ? cup chopped mint, 1 tablespoon minced garlic, 1 teaspoon oregano, 1 teaspoon salt, 1 teaspoon black pepper, 2 teaspoons cumin, 1 tablespoon cornstarch, and ¼ cup water until combined.
Place 2 pounds pork tenderloin into the crock pot.
Pour the sauce mixture evenly over the pork tenderloin.
Cover and cook on LOW for 4–6 hours or HIGH for 3–4 hours, until the pork is tender and cooked through.
Transfer the pork tenderloin to a foil-lined baking sheet.
Spoon some of the extra sauce from the crock pot over the pork.
Broil for 5 minutes per side, or until the pork is lightly browned.
Let the pork rest for 5 minutes.
Slice, serve, and enjoy!
Notes
Refrigerate the leftovers in an airtight container for up to 5 days. BAKING INSTRUCTIONS:
Add the pork tenderloin to a baking dish. Pour the sauce over the top of the tenderloin and cover the pan with foil.
Bake at 400 degrees Fahrenheit for 25-30 minutes until the pork reaches an internal temperature of 145 degrees Fahrenheit.
Remove the foil. Broil for 3-4 minutes to brown the pork slightly. Let the pork rest for 5-10 minutes and then it's ready to slice, serve and enjoy.
GRILLING INSTRUCTIONS:
Pat the pork tenderloins dry with a paper towel.
In a small bowl whisk together all the ingredients except for the pork tenderloin.
Preheat the grill over medium high heat (approximately 400 degrees F) and rub the grill grates with oil to keep the pork from sticking to the grates.
Use tongs to remove the pork from the bag. Shake off the excess marinade. Place on the grill and cook for 15-20 minutes, turning every 3-4 minutes, until the pork reaches an internal temperature of 140 degrees Fahrenheit.
Remove from the grill. Tent with foil and let sit for 5-10 minutes. The pork should reach an internal temperature of 145 degrees F while the pork is resting.
