This Crockpot French Onion Meatloaf is tender, juicy, and packed with savory French onion flavor. An easy slow cooker dinner topped with rich onion gravy that is perfect for busy nights and comfort food cravings!
Melt the butter in a skillet over medium heat. Add in the sliced onions and saute over medium low heat until caramelized and soft (about 10 minutes). Watch the onions closely as they are cooking so that they don’t burn or get too brown.
Add the onions to the bottom of a crock pot.
In a large mixing bowl, stir together the ground beef, beefy onion soup mix, bread crumbs, eggs, milk, worcestershire sauce and half of the shredded cheese.
Form the mixture into a loaf and place it in the crock pot on top of the onions.
Pour the French Onion soup over the top of the loaf in the crock pot.
Cover and cook on low for 5-6 hours or on high for 2.5-3 hours until the meatloaf reaches an internal temperature of 165 degrees F.
Top with the remaining shredded cheese. Cover and cook until the cheese is melted.
Let the meatloaf rest for at least 5 minutes.
Carefully remove the meatloaf from the crock pot. Top with the fresh chopped parsley (if using).
Slice and serve with your favorite sides and enjoy!

Recipe Tips
Combine Meatloaf Mixture - I recommend using a sturdy wooden spoon or your hands to mix together the meatloaf mixture.
Removing Meatloaf from Slow Cooker - If you cannot remove the meatloaf from the crock pot, cut it in half down the middle and remove each side separately from the crock pot. Slice each half and serve.
Rest Meatloaf - Once the meatloaf is finished cooking, allow it to rest so lock in the moisture.
Variations Ideas
Change Meat - We used ground beef but you can easily use ground turkey for an easy substitute.
Spicy Version - Add 1 teaspoon of crushed red pepper or diced jalapeños.
French Onion Mushroom Meatloaf - Add sautéed mushrooms to the mixture.
