How to Make Crockpot French Onion Meatloaf

Step 1 – Melt the butter in a skillet over medium high heat. Add in the sliced onions and saute over medium low heat until caramelized and soft (about 10 minutes). Watch the onions closely as they are cooking so that they don’t burn or get too brown.

Step 2 – Add the onions to the bottom of a crock pot.

Step 3 – In a large bowl, stir together the ground beef, beefy onion soup mix, bread crumbs, eggs, milk, worcestershire sauce, salt and pepper and half of the shredded cheese.

Step 4 – Form the mixture into a loaf and place it in the crock pot on top of the onions.

Step 5 – Pour the French Onion soup over the top of the loaf in the crock pot. Cover and cook on low for 5-6 hours or on high for 2.5-3 hours until the meatloaf reaches an internal temperature of 165 degrees F.

Step 6 – Top with the remaining shredded cheese. Cover and cook until the cheese is melted. Let the meatloaf rest for at least 5 minutes.

  • 2 pounds lean ground beef

  • ¾ cup Italian bread crumbs

  • Melt 1 tablespoon butter in a skillet over medium heat. Add 2 sliced yellow onions and sauté over medium-low heat for about 10 minutes until the onions are caramelized and soft. Watch closely so the onions do not burn or get too brown.

  • In a large mixing bowl, combine 2 pounds lean ground beef, 1 envelope beefy onion soup mix, ¾ cup Italian bread crumbs, 2 large eggs, ½ cup milk, 1 tablespoon Worcestershire sauce, salt and pepper to taste, and 1 cup shredded Swiss cheese (half of the 2 cups total). Mix until everything is well combined.
  • Form the mixture into a loaf and place it in the crock pot on top of the onions.
  • Pour 1 (10.5-oz) can French onion soup over the top of the meatloaf in the crockpot.
  • Cover and cook on low for 5-6 hours or on high for 2.5-3 hours until the meatloaf reaches an internal temperature of 165 degrees F.
  • Sprinkle the remaining 1 cup shredded Swiss cheese on top of the meatloaf. Cover the crockpot again and cook until the cheese is melted.
  • Let the meatloaf rest for at least 5 minutes.
  • Carefully remove the meatloaf from the crockpot and sprinkle with 1 tablespoon chopped parsley if desired.
