Crock Pot Ground Beef Stew Recipe is hearty and delicious while being so easy. Switch things up from traditional stew and make this tasty ground beef stew.
4Yukon gold or red potatoespeeled and chopped into 1" pieces

1can tomato sauce(15 ounces)
1can (6 oz) tomato paste
1can diced tomatoes(14.5 ounces)
3cupslow-sodium beef broth
2teaspoonminced garlic
1teaspoonparsley flakes
2teaspoonItalian seasoning
1teaspoonsaltif needed
1cupsfrozen green peas
Instructions
In a large skillet over medium heat, brown 1 pound lean ground beef until fully cooked. Drain any excess grease if needed.
Add the cooked ground beef to a slow cooker along with 1 finely chopped sweet onion, 1 teaspoon salt, 4 peeled and chopped Yukon gold or red potatoes, 1 pound peeled and diced carrots, 15 ounces tomato sauce, 6 ounces tomato paste, 14.5 ounces diced tomatoes, 3 cups low-sodium beef broth, 2 teaspoons minced garlic, 1 teaspoon parsley flakes, and 2 teaspoons Italian seasoning.
Stir well to combine.
Cover and cook on low heat for 6–7 hours.
One hour before the cooking time is complete, stir in 1 cup frozen green peas. Taste and add the remaining 1 teaspoon salt if needed.
Continue cooking for the remaining hour, then serve warm and enjoy!

Recipe Tips
Brown Ground Beef - Before adding to the slow cooker, make sure to brown ground beef.
Chopping Vegetables - When preparing the stew, make sure to chop vegetables about the same size. This allows them to cook about the same time.
Peas - We recommend adding peas into the stew when you have about an hour left of cooking time. I usually add them when I am preparing the side to serve with the stew.
Recipe Variations or Substitutions
Change the Meat - Yes, this recipe is so easy to use other items. We have used ground turkey before and the meal was just as amazing. We have also combined ground turkey and ground beef.
Tomato Soup - We have even used tomato soup before when I didn't have tomato sauce and the ground beef potatoes mixture was amazing and so flavorful.
Other Sauces - Sometimes I will add a dash of worcestershire sauce or red wine to the beef broth for added flavor. Some call this stew poor man stew because it can be made so frugally but it is so delicious.
Vegetables - We liked using carrots, onions, celery, and russet potatoes. But you can definitely use what veggies you have on hand.
