16ozJar of pepperoncinis(I saved some of the pepperoncinis to top the sandwiches)
1Stick of butter
8ozPackage of sliced provolone cheese
Hoagie rolls
Instructions
Place 3 lb beef roast in the bottom of a slow cooker.
Top the roast with 1 chopped red bell pepper.
Sprinkle 1 packet Zesty Italian dressing seasoning evenly over the roast and peppers.
Pour most of the 16 oz jar of pepperoncinis, including the liquid, over the roast. Reserve a few pepperoncinis for serving on the sandwiches if desired.
Place 1 stick butter on top of the roast.
Cover and cook on LOW for 8–10 hours or HIGH for 3–4 hours, until the beef is tender and easily shreds with a fork.
Remove the roast from the slow cooker and shred the beef. Return the shredded beef to the slow cooker and stir it into the cooking juices.
To assemble the sandwiches, place shredded beef on hoagie rolls.
Top each sandwich with sliced provolone cheese and reserved pepperoncinis.
Serve warm and enjoy.
