Ingredients

brown lentils

small onion
finely chopped

carrots
peeled finely chopped

stalks
celery
diced

diced roasted tomatoes

minced garlic

teaspoon
salt

teaspoon

tablespoon
fresh parsley
Instructions
Add 16 ounces brown lentils, 1 finely chopped small onion, 2 peeled and finely chopped carrots, 2 diced celery stalks, 1 can diced roasted tomatoes, 6 cups chicken broth, 1 teaspoon minced garlic, 1 teaspoon salt, and 1 teaspoon black pepper to the crock pot.
Stir the ingredients together until well combined.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the lentils are tender.
About 15 to 30 minutes before serving, stir in 1 tablespoon fresh parsley.
Serve warm.
