Crock Pot Mexican Casserole Recipe is the perfect meal to feed your family. Each bite is so cheesy and delicious and the entire meal is so easy to prepare.
Place 1 pound browned ground beef, 2 cans red enchilada sauce, 1/2 chopped onion, 1 can Rotel, 1 teaspoon minced garlic, 1 can black beans, 1 can drained corn, and 1 tablespoon taco seasoning in the crock pot.
Stir to combine.
Cook on low for 3 hours.
About 30 minutes before serving, stir in 12 corn tortillas cut into quarters.
Top the casserole with 2 cups shredded cheddar cheese, place the lid back on, and cook until the cheese is melted.

Top with 1/4 cup chopped cilantro, 1 diced avocado, and 1 diced roma tomato before serving, if desired.
