Ingredients

pound
ground beef
browned

cans of red enchiladas sauce
10 oz

onion chopped

can rotel

minced garlic

can black beans
rinsed and drained

can corn

tablespoon
taco seasoning

corn tortillas
cut into quarters

shredded cheese
cheddar

chopped cilantro

Instructions
Add the browned ground beef, enchilada sauce, onion, Rotel, garlic, black beans, corn, and taco seasoning to the crock pot.
Stir to combine.
Cook on low for 3 hours.
About 30 minutes before serving, stir in 12 corn tortillas cut into quarters.
Top the casserole with shredded cheddar cheese, place the lid back on, and cook until the cheese is melted.
Add the lid and cook until cheese is melted
Top with cilantro, diced avocado, and diced Roma tomato before serving, if desired.
