Instructions
Place 2 pounds pork shoulder pieces, ¼ cup all purpose flour, 1 teaspoon salt, and ½ teaspoon pepper in a large zip-top bag. Seal the bag and shake until the pork is evenly coated.
Heat 2 tablespoons oil in a large skillet over medium high heat.
Add the coated pork to the skillet and cook until browned on all sides.
Transfer the browned pork to a slow cooker.
Pour ? cup red wine into the skillet and scrape the bottom of the pan to deglaze it. Pour the wine mixture into the slow cooker.
Add 1 pound russet potatoes, 2 chopped carrots, 2 chopped celery stalks, 1 chopped white onion, 1 tablespoon minced garlic, 2 bay leaves, 1 can crushed tomatoes, 2 tablespoons tomato paste, 2 teaspoons Italian seasoning, and 2 cups chicken broth to the slow cooker.
Cover and cook on low for 6-8 hours until the pork is cooked through and the vegetables are tender.
Remove the bay leaves from the slow cooker.
In a small bowl, whisk together 3 tablespoons cornstarch with 3 tablespoons cold water until smooth.
Stir the cornstarch mixture and 1 cup frozen peas into the slow cooker.
Cover and cook on low for 30-45 more minutes until the stew has thickened and the peas are heated through.
Serve warm and enjoy!

Recipe Tips
Stew Broth - The cornstarch mixture thickens the stew. If you prefer a thinner stew, then do not add the cornstarch mixture to the crock pot.
Keep Slow Cooker Close - To keep the heat in and for the ingredients to cook evenly, keep lid close while slow cooking.
Variations Ideas
Change the Pork - You can easily use any type of pork in this recipe. I used a pork shoulder, but you can use pork stewing meat, pork loin or a pork butt as well.
Change the Meat - If you prefer not to use pork, you can use ground beef, chicken, or lamb.
Add Beans - For even a more heartier stew add in some beans. We recommend pinto, black beans, or any that you have on hand.
Spicy Pork Stew - Add diced green chilies or a pinch of red pepper flakes.
Creamy Version - Stir in a splash of heavy cream or sour cream at the end.
Low-Carb Option - Replace potatoes with cauliflower or turnips.
Add More Vegetables - This is a great recipe to sneak in more veggies such as parsnips or broccoli.
