Place 3 pounds pork tenderloin into a 6-quart crock pot.
In a medium bowl, whisk together ¼ cup balsamic vinegar, ½ cup brown sugar, 2 tablespoons soy sauce, 1 tablespoon cornstarch, ½ cup water, 1 teaspoon salt, and 1 teaspoon pepper.
Pour the balsamic sauce mixture evenly over the pork tenderloin in the crock pot.
