Ingredients

Red Potatoes
Cleaned and Diced

Instructions
Place 3 lbs red potatoes, cleaned and diced, in a crock pot. I used a 4 quart crock pot, but you can use a larger one as well.
In a small bowl, combine ¼ cup olive oil, 1 Tbsp minced garlic, ½ tsp salt, ½ tsp pepper, and 1 tsp Italian seasoning.
Pour the olive oil mixture over the potatoes in the crock pot. Top with ? cup grated Parmesan cheese.
Stir everything together to thoroughly coat the potatoes with the seasoning and cheese.
Cover and cook on high for 4 hours or on low for 8 hours.
Serve warm and enjoy!
