Ingredients
2cupslong grain white rice
½Onionfinely diced
2tablespoonvegetable oil
4cupschicken brothlow-sodium
1can tomato sauce8 ounces
1cupChunky Salsa
1teaspoonMinced Garlic
1teaspoonCumin
1teaspoonChili Powder
½teaspoonSalt
½teaspoonBlack Pepper
Fresh Cilantrochopped
Instructions
Heat 2 tablespoons vegetable oil in a large frying pan over medium heat.
Add 2 cups long grain white rice and ½ finely diced onion. Cook for 5–6 minutes, stirring occasionally, until the onion is softened and the rice is lightly browned.
Spray a slow cooker with non-stick cooking spray.
Transfer the rice and onion mixture to the slow cooker.
Add 4 cups low-sodium chicken broth, 1 can (8 oz) tomato sauce, 1 cup chunky salsa, 1 teaspoon minced garlic, 1 teaspoon cumin, 1 teaspoon chili powder, ½ teaspoon salt, and ½ teaspoon black pepper.
Stir until all ingredients are well combined.
Cover and cook on HIGH for 2–3 hours, or until the liquid has been absorbed and the rice is tender.
