Wash 6 medium sweet potatoes. There is no need to dry them. Use a fork to pierce each sweet potato 6–8 times in different spots.
Place the sweet potatoes in the crock pot. Cover and cook on low for 6-7 hours or on high for 3-3.5 hours until a knife can easily be inserted and removed and the sweet potatoes are soft when squeezed gently.
Slice each sweet potato open and top with 3 tablespoons butter (divided evenly among the potatoes), 1 teaspoon salt, and 1 teaspoon black pepper.
Serve warm and enjoy.
Notes
These are also delicious topped with brown sugar and marshmallows. Yum!
