Crock Pot Chicken Salad is an easy way to prepare a classic recipe. The chicken and veggies cook tender in the slow cooker for a delicious summertime recipe.
Place 2 pounds boneless skinless chicken breast in the crock pot.
Pour ½ cup chicken broth over the chicken and season with ½ teaspoon salt and ¼ teaspoon black pepper.
Cover and cook on low for 4-6 hours until the chicken is cooked through and easy to shred.
In a large bowl, combine the cooked chicken, 2 chopped ribs of celery, ½ diced red onion, ½ cup quartered red seedless grapes, 1 teaspoon fresh dill, and ¾ cup mayonnaise.
Stir in the remaining ingredients until well combined. Add more salt and pepper to taste.
Serve on bread, lettuce or crackers. Enjoy!

You can easily stir in your favorite add-ins. Diced apples, dried cranberries, walnuts, pecans or green onions are all delicious in this easy chicken salad recipe. Refrigerate the leftovers in an airtight container for up to 3-5 days.
