Brown and drain 1 pound ground beef before adding it to the crock pot.
Place the browned ground beef into a 6-quart crock pot.
Add ¼ cup diced onion, 1 teaspoon pepper, 1 teaspoon salt, 1 can cream of mushroom soup, 1 pound frozen diced hash browns, 1 can diced tomatoes with the liquid, 1 cup frozen corn, and 1 drained can kidney beans to the crock pot.
Stir all the ingredients together until fully combined.
Cover and cook on high for 4 hours or on low for 7–8 hours.
Remove the lid and sprinkle 2 cups shredded cheddar cheese evenly over the top.
Cover again and continue cooking for an additional 30 minutes until the cheese is melted.
