Ingredients

pounds
vidalia onions
peeled and sliced
3
boneless skinless chicken breasts
(filleted into 6 pieces)

teaspoon
salt
½
teaspoon
dried thyme

Balsamic Vinegar

beef broth

sliced swiss cheese
Instructions
Place 1 pound peeled and sliced Vidalia onions in the bottom of a slow cooker.
Lay 3 boneless skinless chicken breasts, filleted into 6 pieces, on top of the onions.
Season the chicken with 1 teaspoon salt and ½ teaspoon dried thyme.
Pour ¼ cup balsamic vinegar and 1 cup beef broth evenly over the chicken and onions.
Cook on low for 6-8 hours or high for 3-4 hours.
About 30 minutes before serving, place 6 ounces sliced Swiss cheese evenly over the chicken.
Cook for 30 minutes or until the cheese is melted. Spoon the onion mixture on top of the chicken and serve.
