Instructions
In a large mixing bowl, combine 3 cups flour, 1¾ teaspoons salt, and ½ teaspoon yeast.
If desired, stir in any optional additions such as seasonings, cheese, or raisins at this time.
Pour in 1½ cups water and stir until combined. The dough will be very sticky.
Cover the bowl with plastic wrap and let the dough sit at room temperature for 12-18 hours.
Preheat the oven to 450 degrees Fahrenheit. Place a cast iron pot with a lid, or another oven-safe covered pot, into the oven and heat it for 30 minutes.
While the pot is heating, transfer the sticky dough onto a heavily floured surface. Shape the dough into a ball without kneading it. Cover loosely with the same plastic wrap.
Carefully remove the hot pot from the oven. Place the dough into the hot pot and cover it with the lid.
Bake covered at 450 degrees Fahrenheit for 30 minutes.
Remove the lid and bake for an additional 15 minutes until the bread is golden brown.
Carefully remove the bread from the pot and let it cool on a wire rack before slicing and serving.
