Instructions
Cook 12 oz elbow macaroni according to package directions, then drain and rinse with cold water.
In a large bowl, combine the cooked macaroni with 8 chopped hard boiled eggs, ½ teaspoon salt, and ½ teaspoon pepper.
Stir in 1 cup mayonnaise and 2 tablespoons Dijon mustard until well combined.
Add ½ finely chopped red onion, 3 diced celery ribs, and 3 chopped dill pickles. Mix well.
Sprinkle 1 teaspoon paprika and ¼ teaspoon cayenne pepper (optional) over the salad and stir gently.
Cover and refrigerate for at least 1 hour before serving.
Serve chilled.
