3Boneless Skinless Chicken Breasts(cut horizontally in to make 6 filets)
2tsp Italian Seasoning
2tsp minced garlic
½tsp salt
1 Tbsp Olive Oil
6slicesMozzarella cheese
For the Topping:
4Roma Tomatoes (diced into small pieces and deseeded)
¼Red Onion (diced into small pieces)
4TbspFresh Basil (chopped)
2Tbsp Olive Oil
¼tsp Salt
¼tsp Garlic Powder
4tspBalsamic Glaze
Instructions
Heat 1 Tbsp olive oil in a large skillet over medium-high heat.
Add 3 boneless skinless chicken breasts that have been cut horizontally to create 6 filets. Season the chicken with 2 tsp Italian seasoning, 2 tsp minced garlic, and ½ tsp salt.
Cook the chicken for approximately 5–6 minutes per side, or until the chicken is browned and cooked through to an internal temperature of 165°F.
Top each of the 6 chicken filets with 1 slice mozzarella cheese.
Reduce the heat to low, cover the skillet, and cook for 5–7 minutes until the cheese is melted.
While the chicken cooks, prepare the topping by combining 4 diced and deseeded Roma tomatoes, ¼ diced red onion, 4 Tbsp chopped fresh basil, 2 Tbsp olive oil, ¼ tsp salt, and ¼ tsp garlic powder in a medium bowl. Stir until well combined.
Transfer the chicken to serving plates.
Spoon the tomato mixture evenly over each chicken filet.
Drizzle 4 tsp balsamic glaze evenly over the chicken and topping.
Serve immediately and enjoy.
