Preheat the oven to 350 degrees F and grease a mini muffin pan with nonstick cooking spray. Place 36 wonton wrappers in the cups of the muffin pan and press them down into each cup. Lightly spray the wonton wrappers with nonstick cooking spray.
In a mixing bowl, stir together 1-1/2 cups cooked shredded chicken, 3 oz. softened cream cheese, ? cup buffalo wing sauce, and ½ cup shredded cheddar cheese until well combined.
Use a tablespoon scoop to scoop chicken mixture into each wonton cup.
Bake for 10-12 minutes or until golden brown. Serve with crumbled blue cheese and sliced green onions.
