1candiced tomatoes with green chilies 10 oz. can, drained
1cangreen enchilada sauce10 oz. can
1canblack beans15 oz. can, drained and rinsed
1tspminced garlic
1tsp cumin
½tspsalt
½tsp pepper
2cupscooked rice
1cupcheesecheddar - shredded
Instructions
Cut 3 boneless skinless chicken breasts into bite-sized pieces.
In a large bowl, combine the chicken, 1 drained 10 ounce can diced tomatoes with green chilies, 1 can green enchilada sauce, 1 drained and rinsed 15 ounce can black beans, 1 teaspoon minced garlic, 1 teaspoon cumin, ½ teaspoon salt, and ½ teaspoon pepper.
Divide 2 cups cooked rice evenly between 4 large pieces of foil.
Top the rice evenly with the chicken mixture.
Fold the foil around the ingredients to make sealed foil packets.
Grill over high heat for about 8 minutes on each side or until the chicken is cooked through.
Carefully unwrap the foil packets. Top each one with the shredded cheddar cheese, gently wrap the foil back and allow the heat from the meal to melt the cheese.
Serve warm and enjoy!
Notes
These also can be baked on a baking sheet at 425 degrees F for about 20 minutes until cooked through and has reached an internal temperature of 165 degrees F.
