In a large skillet over medium-high heat, cook 1 pound ground beef until browned and fully cooked. Drain off any excess grease.
Then place the ground beef into a 6 quart crock pot.
Add ½ onion diced and 1 red bell pepper diced to the crock pot with the ground beef.
Stir in 1 can petite diced tomatoes (14.5 oz can), 1 can crushed tomatoes (28 oz can), 1 teaspoon minced garlic, and 1 tablespoon Italian seasoning. Mix until everything is well combined.
Pour 4 cups beef broth (1 carton) into the crock pot and stir to combine all the ingredients.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Remove the lid and break 12 oz lasagna noodles into bite-size pieces directly into the crock pot. Stir the noodles into the soup.
Cover and cook on high for 30-45 minutes until the noodles are cooked through.
Ladle the soup into bowls and top each serving with ½ cup ricotta cheese divided among the servings, 1 cup shredded mozzarella cheese, and 1 cup shredded parmesan cheese before serving.
