In a large skillet, heat 2 tablespoons sesame oil and 2 tablespoons vegetable oil over medium-high heat. Add 1 cup frozen peas and diced carrots blend and cook for 3 to 5 minutes until softened.
Push the vegetables to one side of the skillet. Pour in 3 lightly beaten large eggs and scramble them in the skillet until fully cooked.
Stir in 4 cups cooked rice, 3 tablespoons soy sauce, ½ teaspoon salt, and 1 teaspoon pepper.
Stir for a few minutes until rice is heated through and sauce is mixed through.
Top with sliced green onions.
