Ingredients
2lbsChicken Breasts(approximately 4 breasts)
2Bell Peppers (any color - diced into large pieces)
½cupBarbecue Sauce
2TbspSoy Sauce
4slicesPineapple Rings (fresh or from a can)
½tsp Salt
½tsp Pepper
Instructions
In a small mixing bowl, stir together ½ cup barbecue sauce, 2 tablespoons soy sauce, ½ teaspoon salt, and ½ teaspoon pepper.
Coat 4 large pieces of heavy-duty foil with non-stick cooking spray.
Place 1 filleted chicken breast (from 2 pounds chicken breasts, approximately 4 breasts total) onto each piece of foil.
Divide 2 diced bell peppers evenly among the 4 foil packets, placing them around the chicken.
Top each chicken breast with 1 pineapple ring (4 total pineapple rings).
Drizzle about ¼ cup of the barbecue sauce mixture evenly over each chicken foil packet.
Fold up the sides of the foil and seal tightly to create foil packets.
Place the foil packets on a grill or campfire and cook for 20–25 minutes, until the chicken is fully cooked and reaches an internal temperature of at least 165°F.
Carefully open the foil packets and serve warm.
