In a large mixing bowl, whisk together 4 eggs, 1 cup heavy whipping cream, and 2 tablespoons vanilla extract until smooth.
Stir in 1 tablespoon sugar and 2 tablespoons cinnamon until well combined.
Slice each of the 10 slices of Texas toast into 3 thick sticks using a sharp knife or pizza cutter.
Heat a large skillet or griddle over medium-high heat and melt 3 tablespoons butter, coating the cooking surface evenly. You can also use nonstick cooking spray if preferred.
Working in batches, dip several Texas toast sticks into the egg mixture, turning them with tongs until they are completely coated.
Transfer the coated toast sticks to the hot skillet and cook for 2-3 minutes per side, turning occasionally, until all sides are golden brown and cooked through.
Continue dipping and cooking the remaining Texas toast sticks, adding more butter to the skillet if needed.
Serve the French toast sticks warm with fresh strawberries and maple syrup for dipping, if desired.
