In a shallow bowl, whisk together the flour, salt, black pepper, paprika, garlic powder, and onion powder.
In a second shallow bowl, whisk the eggs until well combined.
Dredge each pork chop in the seasoned flour, dip it into the beaten eggs, then coat it in the seasoned flour again, pressing lightly so the coating adheres.
Pour about 3 inches of vegetable oil into a large, heavy-bottomed skillet or Dutch oven. Heat the oil to 350°F.
Carefully place the pork chops into the hot oil, cooking in batches if necessary to avoid overcrowding.
Fry for 5–7 minutes per side, or until the coating is golden brown and the pork reaches an internal temperature of 145°F.
Transfer the cooked pork chops to a paper towel-lined plate or wire rack to drain any excess oil.
Sprinkle with the chopped fresh parsley and serve immediately while warm.
Notes
You can easily make these with boneless or bone-in pork chops. Use an instant read meat thermometer to make sure that the pork is cooked to a safe temperature and be careful not to over cook the pork chops. Refrigerate the leftover pork chops in an airtight container for up to 5 days.
