In a large mixing bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
Add the vegetable oil, eggs, vanilla extract, and milk. Stir just until the batter is smooth and combined. Do not overmix.
Preheat the waffle iron and lightly coat it with nonstick cooking spray.
Pour about 2/3 to 3/4 cup of batter into the center of the waffle iron and spread it slightly if needed.
Close the lid and cook according to your waffle iron's instructions until the waffle is golden brown and cooked through.
Carefully remove the waffle and place it on a baking sheet or wire rack while you cook the remaining batter.
Repeat until all of the batter has been used (approximately 3 large waffles).
Serve warm with your favorite toppings and enjoy.

This recipe can easily be doubled or tripled to make waffles for your entire family. Refrigerate the leftover waffles in an air tight container for up to 5-7 days. You can also freeze leftover waffles in a freezer safe bag or container.
