Cook 16 ounces rotini pasta until al dente according to the package instructions. Rinse the pasta under cold water, drain well, and let it cool completely.
In a large bowl, combine the cooled pasta, 1 cup diced English cucumber, 1 pint grape tomatoes halved, 1 orange bell pepper diced, ½ cup sliced pitted olives, ½ cup feta cheese, ¼ cup diced red onion, and 1 cup Greek vinaigrette dressing.
Stir to combine.
Store, covered, in the refrigerator for atleast 2 hours. Serve.
Notes: I like to stir in about 1/4 cup extra dressing right before I serve it and sprinkle with more feta just so it looks fancier at a potluck. Enjoy!
