Instructions
Cut 1 lb boneless chicken breasts into 1–2 inch pieces.
In a medium bowl, whisk together ¼ cup extra virgin olive oil, ¼ cup red wine vinegar, 2 tsp honey, 1 Tbsp minced garlic, 1 tsp Italian seasoning, 1 tsp salt, and ½ tsp pepper.
Add the chicken pieces to the marinade and toss to coat well. Marinate in a bowl or large zip-top bag for at least 30 minutes but no longer than 2 hours.
Soak wooden skewers in water for at least 20 minutes.
Preheat the grill to medium-high heat and spray the grill grates with non-stick cooking spray or brush lightly with olive oil.
Thread the marinated chicken, red onion, zucchini, yellow squash, and red bell pepper onto the skewers until all ingredients are used.
Grill the kabobs for approximately 10–15 minutes, turning every few minutes to cook evenly, until the chicken reaches an internal temperature of 165 degrees F.
Remove the kabobs from the grill and place them on a serving platter.
Slice 1 lemon and serve it over the kabobs for squeezing.
