Tender chicken, fresh veggies and a zesty homemade dressing combine for a great grilled chicken salad. This is the perfect Summer salad with tons of flavor.
Preheat your grill over medium high heat (approximately 400 degrees F). In a small bowl, combine ½ teaspoon salt, ½ teaspoon pepper and ½ teaspoon garlic powder. Brush 2 chicken breasts with 1 tablespoon olive oil. Sprinkle the seasoning mixture evenly on each chicken breast.
Place the chicken directly on the grill grates and grill the chicken for 3-5 minutes on each side until the chicken reaches an internal temperature of 165 degrees F.
Move the chicken to a separate plate to rest for at least 5 minutes.
In a small mixing bowl, whisk together ½ cup olive oil, ½ cup red wine vinegar, ½ teaspoon salt, ¼ teaspoon black pepper and ½ teaspoon dried oregano.
Remove the kernels from 1 grilled corn on the cob and slice the chicken.
Place 4 cups chopped romaine lettuce in a large salad bowl or divide evenly into individual serving bowls.
Top the lettuce with the sliced chicken, 2 cups chopped cherry tomatoes, corn kernels, ½ cup sliced red onion and 1 sliced avocado.
Drizzle the dressing over the salad.
Serve immediately and enjoy!
