Peel and slice 6 russet potatoes into ¼-inch thick slices.
Peel and thinly slice 1 onion.
Lay out 6 pieces of aluminum foil on the counter and lightly spray each piece with non-stick cooking spray.
Divide the sliced potatoes and onions evenly among the foil sheets.
Season each packet with approximately ¼ teaspoon salt and ¼ teaspoon pepper (using 1½ teaspoons salt and 1½ teaspoons pepper total).
Top each packet with 1 tablespoon butter (using 6 tablespoons total).
Fold the foil tightly around each potato packet and seal well.
Grill over medium-high heat for 30–40 minutes, until the potatoes are soft and tender.
Carefully remove from the grill and cautiously open the foil packets, as steam will be hot.
Serve warm and enjoy!

You can also bake the foil packet at 375 degrees F for 40-45 minutes until the potatoes are cooked through.
