Preheat a grill to high heat (approximately 450-500 degrees Fahrenheit).
In a small bowl, whisk together the juice and zest of 2 limes, ¼ cup honey, and 1 teaspoon kosher salt. Set aside.
Cut 1 medium seedless watermelon (approximately 2½–3 pounds) in half. Cut each watermelon half into quarters. Slice each quarter into triangular wedges approximately 1 to 1½ inches thick, leaving the rind attached.
Brush the lime mixture onto both sides of the watermelon triangles and place them directly on the grill on the grill grates.
Cook for 2-3 minutes per side until you see grill marks on the watermelon and it’s slightly soft.
Remove from the grill.
Remove the watermelon from the grill and then serve topped with the fresh cilantro and feta cheese.

Notes
This is best served immediately off the grill while warm. This recipe makes approximately 20 watermelon wedges and will serve roughly 6 people for a delicious appetizer or dessert.
