Add 2 peeled mandarin oranges, ½ cup orange juice, and 3 tablespoons white sugar to a food processor and process for 20 seconds.
Add 1 teaspoon vanilla and 1 cup heavy whipping cream and process for 60 seconds.
If the mixture is thick but not stiff, it’s ready. If it is still runny, process for another 60 seconds.
Spoon the mixture evenly into popsicle molds.
Freeze for 4–6 hours or overnight.
Remove the popsicles from the freezer and let them sit on the counter for 2–5 minutes before removing from the molds.
If needed, run the molds under hot water for about 30 seconds to help loosen the popsicles.
Notes
Try putting a paper cupcake liner thru the popsicle stick to keep little hands from getting sticky. It will catch all the drips and keep it from running all over the kids. So handy!
