Instructions
Brown 1 lb ground beef in the instant pot on the sauté setting.
Add 1 finely chopped sweet onion and 2 teaspoons minced garlic, and cook briefly until fragrant.
Add 4 chopped Yukon gold or red potatoes, 1 lb diced carrots, 1 teaspoon salt, 1 teaspoon parsley flakes, and 2 teaspoons Italian seasoning.
Pour in 1 (8 oz) can tomato sauce, 1 (6 oz) can tomato paste, 1 can diced tomatoes, and 3 cups low-sodium beef broth. Stir everything together.
Cover and set the valve to sealing.
Set the pressure to 5 minutes.
Do a quick release to remove the pressure.
Stir in 1 cup frozen green peas and taste, adding up to 1 additional teaspoon salt if needed. Serve.
Notes
