½cupteriyaki sauce
1cupchicken broth or bourbon
2Tablespoonhoney
½cupbrown sugar
2teaspoonminced garlic
2Tablespoondried minced onions
⅛teaspoonground ginger
1Tablespooncorn starch
1Tablespoonwater
Instructions
Spray the insert of a 6-quart Instant Pot with nonstick cooking spray.
Add the bite-size chicken pieces to the Instant Pot and spread them into an even layer.
In a medium bowl, whisk together the teriyaki sauce, chicken broth (or bourbon), honey, brown sugar, minced garlic, dried minced onion, and ground ginger.
Pour the sauce evenly over the chicken.
Secure the lid and set the valve to the Sealing position. Cook on High Pressure for 15 minutes.
When the cook time is complete, carefully perform a quick release. Remove the lid and stir the chicken.
In a small bowl, whisk together the cornstarch and water until smooth. Stir the slurry into the Instant Pot.
Turn the Instant Pot to the Sauté setting and cook, stirring frequently, for 2–4 minutes, or until the sauce has thickened to your desired consistency.
Serve the teriyaki chicken over cooked white rice and spoon the extra sauce over the top.
Notes
Chicken thighs can be substituted for chicken breasts with the same cook time.
If using bourbon instead of chicken broth, the alcohol will cook off during the pressure cooking and sauté steps, leaving a deeper flavor.
Garnish with sliced green onions and sesame seeds for extra flavor and presentation.
