Instant Pot Pork Carnitas is loaded with flavor and cooks in the instant pot easily. Shredded pork carnitas make the best tacos, burritos or enchiladas.
In a small bowl, combine the oregano, chili powder, cumin, black pepper, and salt.
Pat the pork shoulder dry with paper towels. Rub the seasoning mixture evenly over all sides of the pork.
Place the seasoned pork in the Instant Pot. Add the diced onion, minced garlic, lime juice, orange juice, and chicken broth.
Secure the lid and set the valve to the Sealing position. Cook on High Pressure for 45 minutes.
When the cooking time is complete, allow the pressure to release naturally for 15 minutes. Then carefully perform a quick release to release any remaining pressure.
Remove the pork from the Instant Pot and shred it with two forks.
Preheat the broiler. Line a baking sheet with foil and spread the shredded pork into an even layer.
Broil for 5–6 minutes, or until the edges begin to brown and become crispy.
