Rinse the dried pinto beans thoroughly and remove any debris.
Place the beans in the Instant Pot. Add the onion, water, salt, garlic salt, cumin, black pepper, and jalapeño.
Secure the lid and make sure the pressure valve is set to Sealing.
Cook on High Pressure for 50 minutes.
Carefully perform a quick release or allow the pressure to release naturally.
Using a slotted spoon, transfer some of the cooked beans to a large bowl. Mash them with a potato masher, adding cooking liquid as needed until you reach your desired consistency.
Continue mashing the remaining beans, adding more cooking liquid as needed to keep them creamy.
Serve immediately or let the beans cool before storing in freezer-safe containers.
Notes
If you prefer onion flavor without onion pieces, add the onion in halves and remove it before mashing.
For chunkier refried beans, mash by hand. For a smoother consistency, use an immersion blender.
Store cooled beans in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator and reheat on the stovetop over low heat, stirring occasionally.
