Wash the 6 medium sweet potatoes. Pat them dry and pierce each sweet potato 6 to 8 times with a fork in various spots.
Drizzle 1 tablespoon olive oil evenly over the sweet potatoes.
Sprinkle 2 teaspoons sea salt over the sweet potatoes and rub to coat evenly.
Place the trivet in the Instant Pot and pour 1 cup water into the bottom of the Instant Pot.
Arrange the 6 sweet potatoes on top of the trivet.
Seal the Instant Pot and cook on High Pressure for 17 to 20 minutes for medium sweet potatoes, followed by a full natural pressure release (approximately 10 minutes).
Carefully remove the sweet potatoes from the Instant Pot and place them on a serving platter.
Top the sweet potatoes with 3 tablespoons butter.
Sprinkle 1 teaspoon salt and 1 teaspoon black pepper evenly over the sweet potatoes.
