Instructions
Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish with nonstick cooking spray.
In a small bowl, stir together the softened cream cheese, diced jalapeños, and ¼ cup of the shredded cheese until well combined.
Place one chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound it to about ½-inch thickness. Repeat with the remaining chicken breasts.
Spread one-fourth of the cream cheese mixture onto the center of each chicken breast. Roll each chicken breast tightly around the filling and secure with toothpicks if needed.
In a shallow bowl, combine the bread crumbs, salt, and pepper. Roll each stuffed chicken breast in the bread crumb mixture, pressing gently so the coating adheres.
Place the chicken seam-side down in the prepared baking dish.
Bake for 40 to 45 minutes, or until the chicken reaches an internal temperature of 165°F.
Sprinkle the remaining 2 tablespoons of shredded cheese over the tops of the chicken. Return the dish to the oven for 2 to 3 minutes, or until the cheese is melted.
Let the chicken rest for 5 minutes before removing any toothpicks. Serve warm and enjoy!
