Dice 4 cups broccoli into small bite size pieces and set aside.
In a large pot, melt 8 tablespoons butter over medium heat, then add ½ cup diced onion, ½ cup diced celery, 1 teaspoon salt, and 1 teaspoon pepper. Cook until the onions are translucent.
Add the broccoli and cook for 3–4 minutes until the broccoli turns bright green and begins to soften.
Pour in 3 cups chicken broth and 1 cup heavy whipping cream, then stir and bring to a boil.
Reduce heat to a simmer and slowly add 4 cups shredded cheddar cheese, stirring continuously until melted.
Stir in 1 teaspoon xanthan gum and remove from heat once the soup thickens.
