In a large skillet over medium-high heat, cook 2 pounds ground beef, ½ chopped onion, and 1 tablespoon minced garlic until the beef is browned and no longer pink, breaking it apart as it cooks. Drain any excess grease.
Stir 4 ounces cream cheese and 1 can diced tomatoes (14 ounces), drained, into the beef mixture. Cook for 2 to 3 minutes until the cream cheese is melted and the mixture is well combined.
Remove the skillet from the heat and stir in 2 tablespoons keto-friendly ketchup, 2 tablespoons mayonnaise, 1 tablespoon yellow mustard, 1 tablespoon Worcestershire sauce, 2 tablespoons diced dill pickles, 1 teaspoon salt, and 1 teaspoon black pepper.
Stir in 1 cup shredded cheddar cheese until evenly distributed.
Transfer the mixture to a casserole dish and spread it into an even layer.
Bake for 15 minutes.
Remove the casserole from the oven and top with the remaining 1 cup shredded cheddar cheese.
Return the casserole to the oven and bake for 5 to 7 more minutes, or until the cheese is melted.
Let the casserole rest for 10 minutes before serving.
Serve warm and enjoy.
Notes
Refrigerate the leftovers in an airtight container for up to 4-5 days. Reheat the leftovers in the microwave. You can make this recipe with ground chicken or ground turkey if you prefer but it does change the flavor slightly.
