In a hot cast iron skillet, melt 2 tablespoons butter. Add 1 green bell pepper, 1 red bell pepper, ½ onion, and 2 teaspoons minced garlic. Saute until the onions and peppers are soft, then remove the vegetables from the skillet and set aside on a separate plate.
Melt the remaining 2 tablespoons butter in the cast iron skillet and add 1 ½ lbs flank steak. Sprinkle in 1 teaspoon Italian seasoning, ½ teaspoon salt, and ½ teaspoon pepper.
Allow to sear on each side, then cover and cook on medium-low until the steak is cooked all the way through.
Once the steak is done, add the peppers and onion mixture back to the skillet. Cook on low for 2 minutes.
Place 7 slices provolone cheese on top of the steak and vegetable mixture to cover. Cover the skillet with a lid and cook for 1 to 2 minutes until the cheese is melted.
Serve with a side salad and dinner is done.
Notes
*You can use round steak or sirloin steak instead of the flank steak in this recipe. *Refrigerate the leftovers in an air tight container for up to 5-7 days.
